Ingredients
  

Vegetables
  • 2 medium zucchini sliced
  • 2 medium yellow squash sliced
  • 1 cup bell pepper sliced
  • 1 cup carrot sliced
Seasoning
  • 2 tablespoons olive oil for cooking
  • 2 cloves garlic minced
  • 1 teaspoon soy sauce optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. Wash and slice the zucchini and yellow squash into thin rounds. Slice the bell pepper and carrot into thin strips.
Cooking
  1. Heat olive oil in a wok over medium-high heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add the sliced zucchini, yellow squash, bell pepper, and carrot to the wok.
  4. Stir-fry the vegetables for about 5-7 minutes until they are tender but still crisp.
  5. Add soy sauce, salt, and black pepper, and stir to combine. Cook for an additional 1-2 minutes.
  6. Remove from heat and serve immediately.
