Ingredients
  

  • 1 croissant croissant, sliced in half to create two open sandwiches
  • 100 g cream cheese
  • 150 g ricotta
  • 1 tsp vanilla bean paste or extract
  • ½ cup honey
  • 50 g butter
  • 2 lavender flowers for garnish
  • 2 sprigs thyme leaves for garnish

Equipment

  • food processor
  • piping bag
  • small pot
  • grill or broiler

Method
 

  1. Combine ricotta, cream cheese and vanilla paste into a food processor and pulse for 30 seconds to a minute until light and fluffy.
  2. Place whipped ricotta in a piping bag.
  3. Gently toast the cut side of the croissant under a grill or broiler, then let it cool slightly.
  4. Pipe the ricotta onto the croissant halves and place onto serving plates.
  5. Heat butter in a small pot over a stove until melted and bubbling, let it darken in colour slightly.
  6. Add in the honey, let it begin to bubble, then drizzle over bubbling honey onto the ricotta, and scatter over lavender and thyme.
  7. Let honey cool for a minute or two, then eat and enjoy.

Notes

For more flavor, consider adding lemon zest or substituting honey with maple syrup. Store croissant halves and whipped ricotta separately in airtight containers in the fridge for best results.
