Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Royal Icing
  • 4 cups powdered sugar sifted
  • 1 teaspoon lemon juice optional for flavor

Method
 

Make the Cookie Dough
  1. In a mixing bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Bake the Cookies
  1. Preheat the oven to 350°F (175°C).
  2. On a floured surface, roll out the dough to about 1/4 inch thick.
  3. Use cookie cutters to cut out shapes and place them on a baking sheet lined with parchment paper.
  4. Bake for 8-10 minutes or until the edges are lightly golden.
  5. Allow the cookies to cool on a wire rack.
Prepare the Royal Icing
  1. In a mixing bowl, beat the egg whites until frothy.
  2. Gradually add the powdered sugar and beat until the mixture holds stiff peaks.
  3. Add lemon juice if desired and mix until combined.
Decorate the Cookies
  1. Once the cookies are completely cool, use the royal icing to decorate as desired.
  2. Allow the icing to dry completely before serving or packaging.
