Preparation
- Blitz the digestives in a food processor to a small crumb, and add the melted butter. Mix in a bowl until combined.
- Press the biscuit mixture firmly into an 8"/20cm deep springform tin.
- Melt the white chocolate using a bowl over simmering water or in the microwave until fully melted. Leave to cool.
- In a stand mixer, whisk together the cream cheese, icing sugar, and vanilla until smooth. Fold in the melted and cooled chocolate.
- Pour in the whipped double cream and whisk until thick, or whisk the cream to stiff peaks and fold through. Gently fold in the fresh raspberries.
- Spread the cheesecake mixture over the biscuit base, smooth the surface, and chill in the fridge for at least 5-6 hours, preferably overnight.
Finishing Touch
- Once set, drizzle over melted white chocolate.
- Whip together the double cream and icing sugar, then pipe on in swirls.
- Add a fresh raspberry for each swirl and sprinkle with freeze dried raspberries.
