Ingredients
  

Cookie Dough
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder optional
Ganache Filling
  • ½ cup heavy cream
  • ¾ cup dark or white chocolate chips finely chopped
  • 1 tablespoon butter optional
Optional Toppings
  • 2-3 teaspoons freeze-dried raspberry powder or pink food coloring
  • freeze-dried raspberries optional
  • chocolate squares optional
  • heart sprinkles optional
  • melted white chocolate for drizzling, optional

Method
 

Preparation
  1. Prepare each dough flavor separately. Cream butter and sugars, add egg and vanilla, then stir in dry ingredients.
  2. Chill dough for 30 minutes.
  3. Scoop dough into balls, press a well in each.
  4. Bake at 350°F for 10–12 minutes.
  5. Re-press centers after baking.
  6. Cool completely.
Ganache Filling
  1. Make ganache by pouring hot cream over chocolate, stir until smooth.
  2. Fill cookie centers with ganache and decorate as desired.
  3. Let set at room temperature or chill briefly before serving.
