Ingredients
  

Pasta and Tuna
  • 8 oz pasta (fusilli or rotini) cooked and drained
  • 2 cans tuna in water drained
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dijon mustard
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tbsp fresh parsley chopped

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, drained tuna, cherry tomatoes, cucumber, red onion, and bell pepper.
Prepare the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, dijon mustard, salt, black pepper, and parsley.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Adjust seasoning if necessary. Serve chilled or at room temperature.
