Tomato Basil Pasta

Ingredients
  

Pasta
  • 12 oz spaghetti or your choice of pasta
Sauce
  • 2 tbsp olive oil extra virgin
  • 4 cloves garlic minced
  • 4 cups cherry tomatoes halved
  • 1 cup fresh basil chopped
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup parmesan cheese grated, for serving

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside, reserving a cup of pasta water.
Prepare Sauce
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the halved cherry tomatoes and cook for 5-7 minutes until they start to soften and release their juices.
  3. Stir in the chopped basil, salt, and black pepper. Cook for another 2 minutes.
Combine
  1. Add the cooked spaghetti to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
  2. Serve immediately, topped with grated parmesan cheese.

Notes
