Ingredients
  

Tofu and Grains
  • 14 oz Firm Tofu pressed and cubed
  • 1 cup Brown Rice or quinoa
Vegetables
  • 1 cup Broccoli Florets fresh or frozen
  • 1 cup Bell Pepper sliced
  • 1 cup Carrots sliced
  • 1 cup Spinach fresh
Sauce
  • 3 tbsp Soy Sauce or tamari for gluten-free
  • 1 tbsp Sesame Oil
  • 1 tbsp Rice Vinegar
  • 1 tbsp Maple Syrup or agave
Garnish
  • 2 tbsp Sesame Seeds toasted
  • 2 tbsp Green Onions sliced

Method
 

Prepare the Rice
  1. Cook the brown rice according to package instructions in a rice cooker.
Cook the Tofu
  1. Heat a skillet over medium heat and add a splash of oil. Add the cubed tofu and cook until golden brown on all sides.
Sauté the Vegetables
  1. In the same skillet, add the broccoli, bell pepper, and carrots. Sauté for about 5-7 minutes until tender. Add the spinach and cook until wilted.
Make the Sauce
  1. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, and maple syrup.
Combine and Serve
  1. Add the cooked tofu and sauce to the skillet with vegetables. Stir to combine and heat through.
  2. Serve the tofu and vegetable mixture over the cooked rice, garnished with sesame seeds and green onions.
