Ingredients
  

Chili Base
  • 2 pounds ground beef or turkey for a lighter option
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cans diced tomatoes 15 ounces each, undrained
  • 2 cans kidney beans 15 ounces each, rinsed and drained
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup beef broth or vegetable broth
  • 1 cup shredded cheddar cheese optional
Cornbread Topping
  • 1 box cornbread mix 8.5 ounces
  • 1 egg for cornbread mix
  • 0.33 cup milk for cornbread mix

Method
 

Chili Preparation
  1. In a large pot, brown the ground beef (or turkey) over medium heat. Drain any excess grease.
  2. Stir in the diced onion and minced garlic, and cook until softened, about 5 minutes.
  3. Add the diced tomatoes, kidney beans, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and beef broth to the pot.
  4. Bring the mixture to a boil, then reduce the heat. Let it simmer uncovered for 30-40 minutes, stirring occasionally.
Cornbread Preparation
  1. In a separate bowl, mix the cornbread mix with the egg and milk according to package instructions. Set aside.
  2. While the chili simmers, preheat your oven to 400°F (200°C).
Combining and Baking
  1. If using, stir in the shredded cheddar cheese into the chili just before removing it from heat.
  2. Spread the chili mixture evenly in a large baking dish.
  3. Pour the cornbread batter over the chili evenly, spreading it gently to cover the surface.
  4. Place the baking dish in the preheated oven and bake for 20-25 minutes or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  5. Remove from the oven and let it cool for a few minutes before serving.
