Tacos al Pastor

Tacos al Pastor are a popular Mexican dish made with marinated pork, served on corn tortillas and topped with onions, cilantro, and pineapple.

Ingredients
  

Marinade
  • 2 lbs pork shoulder sliced thinly
  • 3 tablespoons achiote paste
  • 1 cup orange juice
  • 1 tablespoon vinegar white or apple cider
  • 2 cloves garlic minced
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup pineapple diced, for topping
Tacos
  • 12 pieces corn tortillas
  • 1 cup onion finely chopped, for topping
  • 1 cup cilantro chopped, for topping
  • 1 lime lime wedges for serving

Method
 

Prepare the Marinade
  1. In a blender, combine achiote paste, orange juice, vinegar, garlic, cumin, oregano, salt, and black pepper. Blend until smooth.
  2. Marinate the sliced pork in the mixture for at least 4 hours, preferably overnight in the refrigerator.
Cook the Pork
  1. Preheat the grill to medium-high heat. Thread the marinated pork onto skewers.
  2. Grill the pork for about 15-20 minutes, turning occasionally, until cooked through and slightly charred.
  3. Remove from the grill and let it rest for a few minutes before slicing into small pieces.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Place the grilled pork on each tortilla, and top with chopped onions, cilantro, and diced pineapple.
  3. Serve with lime wedges on the side.

Notes

For an authentic flavor, consider using a vertical spit (trompo) for cooking the pork, similar to traditional methods.
