Ingredients
  

For the Marinade
  • 2 lbs pork shoulder cut into thin slices
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 3 tbsp achiote paste
  • 2 cloves garlic minced
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tsp salt
  • 1 tsp black pepper
For the Tacos
  • 8 small corn tortillas
  • 1 cup pineapple diced
  • 1 cup onion finely chopped
  • 1 cup cilantro chopped
  • 1 lime cut into wedges

Method
 

Marinate the Pork
  1. In a blender, combine orange juice, pineapple juice, achiote paste, garlic, cumin, oregano, salt, and black pepper. Blend until smooth.
  2. Place the pork slices in a bowl and pour the marinade over them. Mix well to coat the pork. Cover and refrigerate for at least 4 hours, preferably overnight.
Cook the Pork
  1. Preheat the grill to medium-high heat. Remove the pork from the marinade and discard the marinade.
  2. Grill the pork slices for about 3-4 minutes on each side, or until fully cooked and slightly charred. Remove from the grill and let rest for a few minutes.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Slice the grilled pork into small pieces and place on the warmed tortillas.
  3. Top with diced pineapple, chopped onion, and cilantro. Serve with lime wedges on the side.

Notes

For an authentic flavor, consider using a vertical spit (trompo) for cooking the pork, similar to traditional methods.
