Ingredients
  

Artichokes
  • 4 whole artichokes trimmed and cleaned
Stuffing
  • 1 cup breadcrumbs preferably Italian seasoned
  • 1/2 cup Parmesan cheese grated
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon lemon juice freshly squeezed
  • 1/4 cup olive oil plus more for drizzling
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Artichokes
  1. Bring a large pot of salted water to a boil. Add the cleaned artichokes and cook for 10-15 minutes until slightly tender.
  2. Remove the artichokes and let them cool. Once cool, gently spread the leaves apart to make room for stuffing.
Make the Stuffing
  1. In a mixing bowl, combine breadcrumbs, Parmesan cheese, minced garlic, parsley, lemon juice, olive oil, salt, and pepper. Mix until well combined.
Stuff the Artichokes
  1. Carefully stuff the mixture into the leaves of each artichoke, pressing down to pack it in.
  2. Drizzle a little olive oil over the stuffed artichokes.
Bake the Artichokes
  1. Place the stuffed artichokes in a baking dish with a little water at the bottom. Cover with foil and bake at 375°F (190°C) for 40-50 minutes until tender.
  2. Remove the foil for the last 10 minutes to allow the tops to brown.
