Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and diced
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
Add-ins
  • 1 cup celery finely chopped
  • 1/2 cup red onion finely chopped
  • 1/4 cup sweet pickle relish
  • 2 tablespoons fresh dill chopped

Method
 

Prepare the Potatoes
  1. Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes. Drain and let cool.
Make the Dressing
  1. In a mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.
Combine Ingredients
  1. In a large bowl, combine the cooled potatoes, celery, red onion, chopped eggs, pickle relish, and dill. Pour the dressing over the potato mixture and gently stir to combine.
Chill and Serve
  1. Cover the potato salad and refrigerate for at least 1 hour before serving to allow the flavors to meld.
