Ingredients
  

Pancake Batter
  • 1 cup oats blended into flour
  • 1 scoop protein powder vanilla or unflavored
  • 1 cup milk dairy or non-dairy
  • 2 large eggs or flax eggs for vegan option
  • 1 tbsp baking powder
  • 1 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
Toppings
  • 1 cup fresh berries strawberries, blueberries, or raspberries
  • 1/4 cup Greek yogurt for serving
  • 2 tbsp nut butter almond or peanut butter
  • 1 tbsp chia seeds optional

Method
 

Prepare the Batter
  1. In a mixing bowl, combine the blended oats, protein powder, baking powder, and salt.
  2. In another bowl, whisk together the milk, eggs, honey, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
Cook the Pancakes
  1. Heat a skillet over medium heat and lightly grease it.
  2. Pour 1/4 cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown.
  4. Repeat with the remaining batter.
Assemble the Bowl
  1. Stack pancakes in a bowl and top with fresh berries, Greek yogurt, nut butter, and chia seeds.
  2. Drizzle with additional honey or maple syrup if desired.
