Ingredients

For the Cookie Dough
  • 2 1/4 cups all-purpose flour Provides the structure; make sure to spoon and level for accuracy
  • 1 teaspoon baking soda Helps cookies rise and achieve that perfect chewy texture
  • 1/2 teaspoon salt Enhances flavor; adjust if using salted butter
  • 3/4 cup unsalted butter (softened) Use room temperature butter for easy creaming with sugars
  • 1 cup brown sugar (packed) Adds moisture and a rich caramel flavor; light or dark works
  • 1/2 cup granulated sugar Balances sweetness; you can use coconut sugar as a healthier alternative
  • 1 large egg Binds ingredients together; use a flax egg for vegan version
  • 1 teaspoon vanilla extract Essential for depth of flavor; fresh vanilla is ideal if you have it on hand
For the Mix-ins
  • 1 cup white chocolate chips Creamy sweetness complements the nutty pistachios; semi-sweet chips can be used too
  • 1 cup shelled pistachios (chopped) Provides crunch and a unique flavor; feel free to substitute with walnuts or macadamia nuts
For Serving
  • flaky sea salt (for sprinkling) A pinch on top before baking enhances flavors beautifully; optional but recommended

Method

Baking Instructions
  1. Preheat your oven to 350°F (175°C), ensuring it's hot enough to give those cookies a perfect rise and golden edges.
  2. Cream together softened butter and sugars in a large bowl until light and fluffy. This should take about 3-4 minutes.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. Combine the dry ingredients—flour, baking soda, and salt—in a separate bowl. Whisk them together until evenly mixed.
  5. Mix the dry ingredients into your wet mixture gradually, stirring until just combined. Don’t overmix.
  6. Fold in the chopped pistachios and white chocolate chips gently, ensuring they're evenly distributed throughout the dough.
  7. Scoop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden brown but the centers remain soft.
  9. Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
