Ingredients
  

Rice and Vegetables
  • 2 cups cooked jasmine rice preferably day-old
  • 1 cup pineapple chunks fresh or canned
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon vegetable oil for frying
  • 2 cloves garlic minced
  • 2 green onions sliced for garnish
Optional Protein
  • 1 cup shrimp peeled and deveined
  • 2 eggs beaten for added protein

Method
 

Cooking the Rice
  1. Heat the vegetable oil in a wok over medium-high heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. If using, add shrimp and cook until pink, about 2-3 minutes.
  4. Push the shrimp to the side and pour in the beaten eggs, scrambling them until cooked.
  5. Add the cooked rice, pineapple chunks, and mixed vegetables to the wok.
  6. Pour soy sauce over the rice and stir-fry everything together for about 5 minutes.
  7. Remove from heat and garnish with sliced green onions.

Notes

For a vegetarian version, omit shrimp and eggs. You can also add cashews or tofu for extra protein.
