Ingredients
  

Meat
  • 4 pieces chicken breasts thinly sliced
Flour
  • 1/2 cup all-purpose flour for dredging
Butter and Oil
  • 4 tablespoons butter divided
  • 2 tablespoons olive oil
Sauce
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons capers drained
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Chicken
  1. Pound the chicken breasts to an even thickness using a meat mallet.
  2. Dredge the chicken in flour, shaking off the excess.
Cook the Chicken
  1. In a skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
  2. Add the chicken and cook until golden brown, about 3-4 minutes per side. Remove and set aside.
Make the Sauce
  1. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer.
  2. Return the chicken to the skillet and simmer for an additional 5 minutes.
  3. Stir in the remaining butter until melted and the sauce is slightly thickened.
Serve
  1. Plate the chicken and spoon the sauce over the top. Garnish with chopped parsley.
