Ingredients
  

Potatoes
  • 2 pounds Yukon Gold Potatoes Peeled and cut into chunks
Dairy
  • 4 tablespoons Unsalted Butter Melted
  • 1/2 cup Heavy Cream Warm
Eggs
  • 2 large Egg Yolks
Seasoning
  • 1 teaspoon Salt Adjust to taste
  • 1/4 teaspoon Black Pepper Freshly ground
  • 1/4 teaspoon Nutmeg Freshly grated

Method
 

Prepare Potatoes
  1. Place the peeled and cut potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
Mash and Mix
  1. Drain the potatoes and return them to the pot. Mash until smooth. Add melted butter, warm heavy cream, egg yolks, salt, pepper, and nutmeg. Mix until well combined.
Pipe and Bake
  1. Preheat the oven to 400°F (200°C). Transfer the potato mixture to a piping bag fitted with a star tip. Pipe the mixture onto a baking sheet in decorative mounds.
  2. Bake in the preheated oven for 20-25 minutes or until golden brown on top.
