- Arrange a rack in the center of the oven; preheat to 350°F. Line a large rimmed baking sheet with foil, then line foil with parchment to prevent lemon slices from directly contacting the foil. In the center of the parchment, arrange lemon slices in an even layer.
- Season the salmon with kosher salt and freshly ground black pepper, then arrange it on top of the lemon slices.
- In a small bowl, whisk together garlic, melted butter, honey, dried oregano, and fresh thyme. Pour this mixture over the salmon, then fold up the parchment and foil around the salmon.
- Bake the salmon until it is opaque, cooked through, and its flesh easily flakes with a fork, about 25 minutes.
- Turn on the broiler. Broil the salmon, watching closely, until browned in spots, about 4 to 6 minutes.
- Transfer the lemon slices and salmon to a platter. Top with finely chopped fresh parsley before serving.
