Ingredients
  

  • 1.5 pounds Salmon, with the skin removed and cubed
  • 1 pinch Sea Salt
  • 2 tablespoons Soy Sauce or Coconut Aminos
  • 2 tablespoons Kewpie Mayo
  • 1.5 cups Cooked Sushi Rice
  • 1 teaspoon Rice Vinegar
  • 12 squares Nori
  • 1 squeeze Kewpie Mayo (for garnish)
  • 1 tablespoon Sesame Seeds (for garnish)
  • 0.25 cup Green Onions, chopped (for garnish)

Method
 

  1. Preheat your oven to 400 F and lightly grease a standard size muffin tin.
  2. In a large bowl, combine cubed salmon, sea salt, soy sauce, and mayo. Toss to coat well.
  3. In a separate bowl, mix the cooked sushi rice with rice vinegar until the rice is fully coated.
  4. Prepare the nori sheets and cut them into squares if necessary to fit into the muffin tin cavities.
  5. Add about 2-3 tablespoons of the rice mixture to each nori sheet, fold, and place inside the muffin tin. Repeat until all cavities are filled.
  6. Top each nori cup with about 2 tablespoons of the salmon mixture.
  7. Bake the cups for 15 minutes, or until the salmon is cooked to your liking.
  8. Remove from the oven, top with garnishes of choice, serve, and enjoy.

Notes
