Total Time 55 minutes
Servings: 8 servings

Ingredients

  • 6 cups peeled and 1/4-inch sliced Honeycrisp and Granny Smith apples (about 6 medium apples)
  • 1/2 cup packed dark brown sugar
  • 2 tbsp cornstarch
  • 1.5 tsp ground cinnamon and 1/4 tsp ground nutmeg
  • 1 tbsp fresh lemon juice and 1 tsp vanilla extract
  • 2 tbsp unsalted butter, melted
  • 1.5 cups all-purpose flour
  • 1/2 cup granulated sugar (plus 2 tbsp mixed with 1/2 tsp cinnamon for sprinkling)
  • 2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 3/4 cup buttermilk or whole milk
  • 6 tbsp unsalted butter, melted

Method

  1. Preheat oven to 375°F (190°C) and butter a 9x13-inch baking dish. Toss sliced apples with brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, vanilla, and 2 tbsp melted butter in the dish.
  2. Whisk flour, granulated sugar, baking powder, and salt in a medium bowl. Stir in buttermilk and 6 tbsp melted butter just until combined.
  3. Drop spoonfuls of cobbler batter evenly over the apples and sprinkle generously with cinnamon-sugar.
  4. Bake for 38–42 minutes until golden brown and bubbling (or cook in a paper-towel-lined Crockpot on HIGH for 2.5–3 hours). Cool 15 minutes and serve warm with vanilla ice cream!
