  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 cups fresh okra, sliced
  • 2 cups diced tomatoes canned or fresh
  • 1 cup vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper optional for heat
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Method
 

Cooking the Stew
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and bell pepper, sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add sliced okra and cook for 5 minutes, stirring occasionally.
  5. Pour in diced tomatoes and vegetable broth, then season with salt, black pepper, cayenne pepper, thyme, and paprika.
  6. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
  7. Taste and adjust seasoning if necessary before serving.
