Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Street Corn Topping
  • 2 cups corn kernels fresh or frozen
  • 1 tablespoon mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon lime juice
  • 1/2 cup cotija cheese crumbled
  • 2 tablespoons cilantro chopped
  • 1 teaspoon smoked paprika

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
  3. Coat the chicken breasts with the spice mixture.
  4. Grill the chicken for 6-7 minutes on each side or until cooked through.
Prepare the Street Corn Topping
  1. In a separate bowl, mix corn, mayonnaise, sour cream, lime juice, cotija cheese, cilantro, and smoked paprika.
  2. Stir until well combined.
Serve
  1. Once the chicken is cooked, remove from the grill and let rest for a few minutes.
  2. Top each chicken breast with the street corn mixture and serve immediately.
