Ingredients
  

Corn Salsa
  • 2 cups corn kernels fresh or frozen
  • 1 cup diced tomatoes
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Guacamole
  • 2 ripe avocados mashed
  • 1 small tomato diced
  • 1/4 cup onion finely chopped
  • 1 lime juice freshly squeezed
  • 1/2 teaspoon salt
  • 1 teaspoon jalapeño finely chopped, optional
Refried Beans
  • 2 cans black beans drained and rinsed
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 cup water as needed

Method
 

Corn Salsa
  1. In a mixing bowl, combine corn, diced tomatoes, red onion, cilantro, lime juice, salt, and black pepper. Mix well and set aside.
Guacamole
  1. In a bowl, mash the avocados. Stir in diced tomato, onion, lime juice, salt, and jalapeño (if using). Mix until combined.
Refried Beans
  1. In a pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add black beans, cumin, and salt. Mash the beans with a fork or potato masher, adding water as needed to reach desired consistency.
