Ingredients
  

Rice Ingredients
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth or vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1/2 cup frozen peas optional
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Cooking the Rice
  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Stir in the diced tomato, cumin, chili powder, and salt. Cook for 2-3 minutes until the tomato softens.
  4. Add the rinsed rice to the saucepan and stir to coat the rice with the mixture.
  5. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  6. If using, stir in the frozen peas during the last 5 minutes of cooking.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro before serving.
