Ingredients
  

Pasta
  • 1 cup orzo pasta
Vegetables
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1 medium zucchini, diced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Method
 

Cook the Orzo
  1. Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. Drain the orzo in a colander and rinse under cold water to stop the cooking process.
Prepare the Dressing
  1. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper until well combined.
Combine Ingredients
  1. In a large bowl, combine the cooked orzo, cherry tomatoes, spinach, zucchini, and parsley.
  2. Pour the dressing over the orzo mixture and toss to combine. Adjust seasoning if necessary.
Serve
  1. Serve the lemon orzo pasta warm or at room temperature, garnished with additional parsley if desired.
