Ingredients
  

Lamb Chops
  • 4 pieces lamb shoulder chops bone-in
Marinade
  • 3 tablespoons olive oil extra virgin
  • 2 cloves garlic minced
  • 1 tablespoon rosemary fresh, chopped
  • 1 tablespoon thyme fresh, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 lemon juice freshly squeezed
Vegetable Side
  • 2 cups mixed vegetables zucchini, bell peppers, and carrots

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, minced garlic, rosemary, thyme, salt, pepper, and lemon juice. Mix well.
Marinate the Lamb
  1. Place the lamb shoulder chops in a large resealable bag or dish and pour the marinade over them. Seal and refrigerate for at least 1 hour, preferably overnight.
Prepare the Grill
  1. Preheat the grill to medium-high heat. Oil the grates to prevent sticking.
Grill the Lamb
  1. Remove the lamb from the marinade and discard the marinade. Grill the chops for about 6-8 minutes per side, or until they reach an internal temperature of 145°F (medium rare).
Prepare the Vegetables
  1. While the lamb is grilling, toss the mixed vegetables with olive oil, salt, and pepper. Grill them in a vegetable basket or foil for about 10-15 minutes until tender.
Serve
  1. Remove the lamb from the grill and let it rest for 5 minutes before serving. Serve with grilled vegetables.

Notes

For a more intense flavor, marinate the lamb chops overnight. Adjust cooking time based on the thickness of the chops.
