Horchata

A refreshing Mexican beverage made from rice, milk, vanilla, and cinnamon.

Ingredients
  

Base Ingredients
  • 1 cup long-grain white rice rinsed and drained
  • 5 cups water
  • 1 cup milk can use almond milk for a dairy-free version
  • 1/2 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon plus extra for garnish
  • 1/4 teaspoon salt

Method
 

Prepare the Rice
  1. Soak the rinsed rice in water for at least 3 hours or overnight.
Blend Ingredients
  1. Drain the rice and add it to a blender with 5 cups of fresh water. Blend until smooth.
Strain the Mixture
  1. Strain the blended mixture through a fine mesh strainer or cheesecloth into a bowl, discarding the solids.
Combine and Chill
  1. Stir in the milk, sugar, vanilla extract, ground cinnamon, and salt. Mix well.
  2. Refrigerate for at least 1 hour before serving.
Serve
  1. Serve chilled over ice, garnished with a sprinkle of cinnamon.

Notes

Horchata can be stored in the refrigerator for up to 3 days. Stir well before serving as ingredients may settle.
