Ingredients
  

Marinade
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
Bowls
  • 4 4-6 ounce salmon filets
  • 2 cups cooked white rice
  • 1 each avocado
  • 1 each cucumber
  • 1 cup cooked edamame
  • ½ cup sriracha mayo

Method
 

Preparation
  1. Cut your salmon into 1 inch cubes and remove the skin if preferred.
  2. Whisk together all marinade ingredients in a large bowl and add the salmon to marinate for at least 20 minutes up to 1 hour.
Cooking
  1. Heat a large skillet with a splash of oil and add in the marinated salmon, reserving the marinade for later.
  2. Cook for 2-3 minutes on each side until crispy.
  3. Add in the reserved marinade and cook until the sauce thickens.
Assembly
  1. Assemble your bowls with a bed of rice and add the salmon, avocado, cucumber, and edamame.
  2. Top with the sriracha mayo.
  3. Sprinkle with red pepper flakes and sesame seeds before serving.
