  • 0.5 cup Pineapple juice
  • 0.25 cup Honey
  • 2 tablespoons Soy sauce or Tamari
  • 2 cloves Garlic, minced
  • 1 Juice of 1 Lemon
Salmon Ingredients
  • 6 ounces Salmon fillets, skin-on
  • Pineapple rings for garnishing

Method
 

Marinating
  1. Mix pineapple juice, honey, soy sauce, garlic, and lemon juice in a bowl.
  2. Place salmon in a zip-lock bag, pour the marinade over, seal, and refrigerate for 30 minutes to 2 hours.
Cooking
  1. Preheat oven to 400°F (204°C) for baking or grill to medium-high heat for grilling.
  2. Pour the reserved marinade into a saucepan, simmer over medium heat until reduced by half.
  3. For baking, place salmon on a lined baking sheet, skin-side down, glaze, and bake for 12-15 minutes.
  4. For grilling, place salmon skin-side down, grill with the lid on for 6-8 minutes, glaze, flip, and grill for 3-4 minutes more.
  5. Garnish with pineapple rings before serving.
