Ingredients
  

  • 1 breast boneless, skinless chicken
  • 1 pound dry fettuccine noodles
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1.25 cups low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • 1.5 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 0.25 cup chopped fresh parsley

Method
 

  1. Cut the chicken breast into thin strips.
  2. Boil the fettuccine noodles according to the box instructions, drain, and set aside.
  3. Heat a nonstick pan with the extra virgin olive oil and add the chicken strips. Cook on medium heat for 6-7 minutes on each side until golden brown. Remove chicken from pan when ready and set aside.
  4. Add the garlic to the pan and sauté for 3 minutes.
  5. Deglaze the pan with the chicken broth, add the fresh lemon juice, and bring to a boil.
  6. Add the heavy cream, then add the cooked pasta and chicken.
  7. Add the grated Parmesan cheese and stir until everything is well combined.
  8. Sprinkle with fresh parsley and enjoy.
