Fish and Vegetables
  • 1.5 lb white fish fillet such as cod or halibut 1 to 1 ½ in thickness
  • Kosher salt to taste
  • Ground black pepper to taste
  • Extra virgin olive oil for brushing and drizzling
  • 0.5 unit lemon juice of
  • 8 oz cherry tomatoes halved
  • 3 oz pitted olives halved
  • 3 tbsp minced red onion
  • 4 to 5 cloves garlic minced
  • 1 tbsp fresh thyme leaves
  • 2 tsp dried oregano

Method
 

Cooking Steps
  1. Heat the oven to 425 degrees F.
  2. Pat the fish dry and season with salt and pepper on both sides.
  3. Brush a 9 ½ x 13-inch baking dish with a little extra virgin olive oil and place the fish in it.
  4. Squeeze ½ lemon juice all over the top of the fish.
  5. In a medium mixing bowl, combine the tomatoes, olives, onions, garlic, thyme, oregano, a very small pinch of salt, and ground pepper. Drizzle with about 3 tablespoons extra virgin olive oil and toss to combine.
  6. Pour the tomato and olive mixture over the fish.
  7. Bake in the heated oven for 15 to 20 minutes, depending on the thickness of your fish.
  8. Remove from the heat and serve.
