Ingredients
  

Vegetables
  • 2 cups green cabbage shredded
  • 1 cup carrots shredded
  • 1 cup red cabbage shredded
  • 1/2 cup green onions chopped
Dressing
  • 1/4 cup Greek yogurt plain
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, red cabbage, shredded carrots, and chopped green onions.
Make the Dressing
  1. In a separate bowl, whisk together the Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until everything is well coated. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
