Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup fermented sauerkraut for gut health
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes until water is absorbed.
Mix Salad
  1. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, sauerkraut, and parsley.
Make Dressing
  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
Combine
  1. Pour dressing over the salad and toss to combine. Serve immediately or chill for 30 minutes.
