Ingredients

  • 1 large cucumber cut into 1-inch chunks
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives pitted
  • Fresh dill or mint for garnish (optional)
Cheese
  • 8 oz feta cheese cut into 1-inch cubes
Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  2. Thread one piece each of cucumber, feta, cherry tomato, and olive onto each skewer, repeating until all ingredients are used.
  3. Arrange skewers on a serving platter and drizzle with the prepared dressing.
  4. Garnish with fresh dill or mint if desired, and serve immediately or chill until ready to serve.
