Ingredients
  

Salad Base
  • 2 cups edamame (shelled) cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or agave syrup for vegan option
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Salad
  1. In a mixing bowl, combine the edamame, cherry tomatoes, cucumber, red onion, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, rice vinegar, soy sauce, sesame oil, honey, garlic, salt, and pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for 30 minutes for better flavor.
