Ingredients
  

  • 1 bunch kale, lacinato or curly
  • 2 teaspoons extra-virgin olive oil
  • 2 cloves garlic, chopped
  • sea salt
  • freshly ground black pepper
  • 1 wedge lemon, for squeezing

Method
 

  1. Remove and discard the coarse parts of the kale stems. Chop or tear the leaves.
  2. In a large skillet, heat the oil over medium heat.
  3. Add the kale leaves, garlic, pinches of salt, and several grinds of pepper. Sauté for 2 to 4 minutes, tossing until the kale has wilted down.
  4. Turn off the heat, squeeze a little lemon juice over the kale, and toss.
  5. Season to taste and serve.
