Ingredients
  

Main Ingredients
  • 2 cups Quinoa Rinsed
  • 4 cups Vegetable Broth Or water
  • 1 cup Black Beans Canned, drained and rinsed
  • 1 cup Corn Frozen or canned
  • 1 cup Bell Pepper Diced
  • 1 cup Cherry Tomatoes Halved
  • 1 tablespoon Olive Oil For cooking
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
Toppings
  • 1 avocado Avocado Sliced
  • 1 cup Sour Cream Optional
  • 1 cup Shredded Cheese Optional

Method
 

Prepare Quinoa
  1. In a camping pot, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15-20 minutes until liquid is absorbed.
Cook Vegetables
  1. In a skillet, heat olive oil over medium heat. Add bell pepper and cook until softened, about 5 minutes.
  2. Stir in black beans, corn, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes.
Combine and Serve
  1. Fluff quinoa with a fork and combine with the vegetable mixture. Serve warm topped with avocado, sour cream, and cheese if desired.
