Ingredients
  

Chicken and Broccoli Casserole
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets fresh or frozen
  • 1 cup cheddar cheese, shredded
  • 1 can cream of chicken soup
  • 1 cup rice, uncooked white or brown
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Taco Night
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 12 small taco shells
  • 1 cup lettuce, shredded
  • 1 cup tomato, diced
  • 1 cup cheddar cheese, shredded
  • 1 cup sour cream optional
  • 1 cup salsa optional

Method
 

Chicken and Broccoli Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked chicken, broccoli, cheddar cheese, cream of chicken soup, rice, water, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture into a greased baking dish and spread evenly.
  4. Cover with foil and bake for 25 minutes.
  5. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
Taco Night
  1. In a large skillet, brown the ground beef or turkey over medium heat until fully cooked.
  2. Drain excess fat and add taco seasoning according to package instructions.
  3. Warm taco shells in the oven according to package instructions.
  4. Serve the meat in taco shells and top with lettuce, tomato, cheese, sour cream, and salsa as desired.
