Ingredients
  

Pasta and Eggs
  • 8 oz elbow macaroni or any pasta of choice
  • 4 large eggs hard-boiled and chopped
Dressing
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika plus more for garnish
  • salt to taste
  • pepper to taste
Vegetables
  • 1 cup celery diced
  • 1/2 cup red onion diced
  • 1/2 cup sweet pickle relish
Garnish
  • 2 tbsp chives chopped

Method
 

Prepare the Pasta
  1. Cook the elbow macaroni according to package instructions. Drain and rinse under cold water.
Make the Dressing
  1. In a mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, paprika, salt, and pepper until smooth.
Combine Ingredients
  1. In a large bowl, combine the cooked pasta, chopped hard-boiled eggs, diced celery, red onion, and sweet pickle relish.
  2. Pour the dressing over the pasta mixture and stir gently to combine.
Serve
  1. Garnish with chopped chives and additional paprika if desired. Serve chilled or at room temperature.
