Puff Pastry Layer
  • 1 sheet Puff Pastry
Filling
  • 25 Fresh Raspberries
  • 1/2 cup Strawberry Cream Cheese or Regular Cream Cheese
  • 1 cup Whipped Cream
  • 1/2 cup Granulated Sugar
  • 2 Tbsp Granulated Sugar for sprinkling
  • 1 Tbsp Corn Starch
  • Powdered Confectioners Sugar to taste

Method
 

Baking the Pastry
  1. Preheat your oven to 400°F (200°C). Roll out the puff pastry on a floured surface to your desired thickness.
  2. Cut the pastry into equal rectangles and place them on a baking sheet lined with parchment paper.
  3. Sprinkle the pastry with granulated sugar, and bake in the preheated oven for 15-20 minutes or until golden brown and crisp.
  4. Remove the pastry from the oven and allow it to cool completely before assembling.
Assembling the Napoleon
  1. In a mixing bowl, combine the strawberry cream cheese and whipped cream until smooth.
  2. Layer the cooled pastry rectangles: place one rectangle on a serving dish, spread a layer of the cream mixture, and top with fresh raspberries.
  3. Repeat layering with another pastry rectangle, cream, and raspberries. Top with the third pastry layer.
  4. Dust the top with powdered sugar for garnish and serve immediately.
