Ingredients
  

Mediterranean Salad
  • 2 cups cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup feta cheese crumbled
  • 1/2 cup red onion thinly sliced
  • 1/4 cup black olives sliced
  • 1/4 cup olive oil for dressing
  • 2 tablespoons red wine vinegar for dressing
  • 1 teaspoon dried oregano
  • salt to taste salt
  • pepper to taste black pepper
Watermelon Feta Salad
  • 4 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh mint chopped
  • 2 tablespoons balsamic glaze for drizzling
  • 1 tablespoon olive oil for drizzling
Quinoa Salad
  • 1 cup quinoa cooked and cooled
  • 1 bell pepper bell pepper diced
  • 1 cup corn fresh or canned
  • 1/2 cup cilantro chopped
  • 1/4 cup lime juice freshly squeezed
  • 1 teaspoon cumin
  • salt to taste salt
  • pepper to taste black pepper

Method
 

Mediterranean Salad Preparation
  1. In a large mixing bowl, combine cherry tomatoes, cucumber, feta cheese, red onion, and black olives.
  2. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
Watermelon Feta Salad Preparation
  1. In a large bowl, combine cubed watermelon, feta cheese, and chopped mint.
  2. Drizzle with balsamic glaze and olive oil before serving.
Quinoa Salad Preparation
  1. In a large bowl, mix together cooked quinoa, diced bell pepper, corn, and cilantro.
  2. Add lime juice, cumin, salt, and pepper, and toss to combine.
