Ingredients
  

Meat & Beans
  • 1 lb ground beef
  • 1 chopped onion
  • 1 can refried beans
Spices
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1/4 tsp cayenne
  • 1 TBSP minced garlic
Tortillas & Cheese
  • 16 small fajita size flour tortillas
  • 2 cups shredded Colby Jack cheese
Toppings
  • taco sauce to taste
  • diced tomatoes to taste
  • chopped green onions to taste

  • vegetable oil for frying

Method
 

Cooking Process
  1. Brown the ground beef in a large skillet over medium high heat.

  2. Add the chopped onion to the skillet.

  3. Once the beef is fully cooked, drain any extra grease.

  4. Season the beef with salt, pepper, chili powder, cumin, dried cilantro, and cayenne.

  5. Add the minced garlic and stir.

  6. While the beef is cooking, lightly fry the flour tortillas in a separate skillet over medium heat with enough vegetable oil to cover the bottom.

  7. Fry tortillas on both sides until golden brown, about 1-2 minutes on each side.

  8. Once tortillas are fried, place them on paper towels to absorb any extra grease.

  9. Heat up the refried beans to make them easier to work with.

  10. Spread refried beans on top of the flour tortillas.

  11. Add a scoop of ground beef on top of the beans.

  12. Add a little bit of shredded cheese and place another fried tortilla on top.

  13. Spoon some taco sauce on top and add more shredded cheese.

  14. Bake at 400 degrees F for about 10 minutes.
