  • 1.5 cups quick oats
  • 0.5 cups vanilla protein powder
  • 0.5 cups riced cauliflower or oats can use 1/3 cup more oats instead
  • 0.5 cups black cocoa powder
  • 0.5 tsp baking powder
  • 1-2 tbsp honey or maple syrup to taste
  • 0.5 tsp vanilla extract
  • 1.5 tbsp mini chocolate chips
  • 1.5 cups nonfat milk of choice
  • 0.75 cups unsweetened applesauce or bananas 2 small ripe bananas, mashed
Cream Protein Topping
  • 1 cup plain Greek yogurt or plant-based alternative
  • 1 scoop protein powder
  • 1 tbsp white chocolate chips
  • 2 tsp mini chocolate chips

Method
 

Baking
  1. Preheat oven to 350F (180C).
  2. Combine applesauce (or bananas), oats, protein powder, riced cauliflower (or extra oats), cocoa powder, baking powder, honey/maple syrup, vanilla extract, mini chocolate chips, and milk in the dish. Stir until smooth.
  3. Sprinkle extra chocolate chips on top if desired.
  4. Bake for 30-35 minutes or until firm to the touch.
  5. Let cool completely, then pipe or spread the protein topping on top.
  6. Cut into 6 servings. Serve warm or cold with protein topping and a sprinkle of chocolate chips.
