Crispy Smashed Potatoes

Deliciously crispy on the outside and fluffy on the inside, these smashed potatoes are a perfect side dish.

Ingredients
  

Potatoes
  • 2 pounds Yukon Gold Potatoes or any waxy potatoes
Seasoning
  • 1 teaspoon Salt for boiling
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Olive Oil for drizzling
  • 2 tablespoons Fresh Parsley chopped, for garnish

Method
 

Prepare the Potatoes
  1. Preheat the oven to 450°F (230°C).
  2. Wash and scrub the potatoes, then place them in a large pot and cover with water.
  3. Add 1 teaspoon of salt to the water and bring to a boil.
  4. Cook the potatoes until fork-tender, about 15-20 minutes.
Smashed and Seasoned
  1. Drain the potatoes and let them cool slightly.
  2. Line a baking sheet with parchment paper.
  3. Place the potatoes on the baking sheet and gently smash each potato with a fork or the bottom of a glass.
  4. Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, onion powder, black pepper, and additional salt if desired.
Bake
  1. Bake in the preheated oven for 20-25 minutes, or until the edges are crispy and golden brown.
  2. Remove from the oven and garnish with chopped parsley before serving.

Notes

For extra crispiness, you can broil the potatoes for an additional 2-3 minutes after baking.
