Ingredients
  

Cupcake Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg at room temperature
  • 1/2 cup whole milk at room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup boiling water
Chocolate Frosting
  • 1/2 cup unsalted butter softened
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract

Method
 

Prepare Cupcakes
  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the egg, milk, oil, and vanilla extract to the dry ingredients and mix until smooth.
  4. Carefully stir in the boiling water until well combined. The batter will be thin.
  5. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  6. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let cool in the pan for 5 minutes before transferring to a cooling rack.
Prepare Frosting
  1. In a mixing bowl, beat the softened butter until creamy.
  2. Add cocoa powder and powdered sugar alternately with milk, beating until smooth and fluffy.
  3. Stir in vanilla extract.
  4. Once cupcakes are completely cool, frost them with the chocolate frosting.
