Ingredients
  

Pasta and Chicken
  • 2 cups cooked rotini pasta or any pasta of choice
  • 1 cup cooked chicken breast diced or shredded
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1 cup bell pepper diced
  • 1/2 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon dried oregano

Method
 

Prepare the Pasta and Chicken
  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooked chicken with the pasta.
Add Vegetables
  1. Add cherry tomatoes, cucumber, red onion, bell pepper, and black olives to the pasta and chicken mixture.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, honey, salt, black pepper, and oregano.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Serve chilled or at room temperature.
