Chicken and Vegetables
  • 4 pieces boneless, skinless chicken breasts
  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, carrots) chopped
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut four large pieces of aluminum foil and lay them out on a baking sheet.
  3. Place one chicken breast in the center of each piece of foil.
  4. In a bowl, combine the mixed vegetables with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  5. Divide the vegetable mixture evenly over the chicken breasts.
  6. Fold the foil over the chicken and vegetables to create a sealed packet.
  7. Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Carefully open the foil packets and serve hot.
