Ingredients
  

Pasta
  • 12 oz Penne pasta or your choice of pasta
Chicken
  • 2 breasts Boneless, skinless chicken grilled and sliced
Bruschetta Topping
  • 2 cups Cherry tomatoes halved
  • 1/4 cup Fresh basil chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil for drizzling
  • 1 tbsp Balsamic glaze for drizzling
  • Salt to taste
  • Pepper to taste
Cheese
  • 1/2 cup Parmesan cheese grated

Method
 

Prepare the Pasta
  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
Grill the Chicken
  1. Season the chicken breasts with salt and pepper. Grill over medium heat for about 6-7 minutes per side or until cooked through. Let rest and slice.
Make the Bruschetta Topping
  1. In a bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper. Mix well.
Combine and Serve
  1. In a large skillet, combine the cooked pasta, bruschetta topping, and sliced chicken. Toss gently to combine. Drizzle with balsamic glaze and sprinkle with Parmesan cheese before serving.
