Ingredients
  

Pasta
  • 12 oz spaghetti or your choice of pasta
Vegetables
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
Sauce
  • 1/4 cup olive oil
  • 1 lemon zest and juice
  • 1/4 cup parmesan cheese grated
  • to taste salt
  • to taste black pepper
Garnish
  • 2 tablespoons fresh basil chopped

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
Prepare Asparagus
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add asparagus pieces and cook for about 3-4 minutes until tender but still crisp.
  3. Stir in cherry tomatoes and cook for an additional 2 minutes.
Combine
  1. Drain the pasta and add it to the skillet with the asparagus and tomatoes. Toss to combine.
  2. Add lemon zest, lemon juice, parmesan cheese, salt, and pepper. Toss again until well mixed.
Serve
  1. Garnish with fresh basil and serve immediately.
